Turkey Taco Lettuce Wraps

Ingredients
  

  • 1 lb. 93% lean ground turkey
  • ½ white onion
  • ½ red bell pepper
  • ½ cup tomato sauce
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp ground paprika
  • ½ tsp dried oregano leaves
  • 1 head of iceberg lettuce

Optional to serve:

  • Fresh cilantro
  • Can of whole kernel corn

Instructions
 

  • In a large pan over medium heat, break ground turkey into small pieces.
  • Allow turkey to cook for approx. 5 minutes until all meat is browned. (Tip: Turkey should reach an internal temperature of 165 °F.)
  • Chop onion and bell pepper.
  • In a small bowl, combine chili powder, ground cumin, garlic powder, ground paprika, and dried oregano.
  • Add spice mix, onion, bell pepper, and tomato sauce to pan. Stir.
  • Reduce to low heat and cover. Allow to simmer for 10 minutes.
  • Break lettuce leaves into pieces the size of taco shells.
  • Fill lettuce leaves with turkey mixture. Enjoy!

Optional:

  • Top with corn kernels and chopped cilantro.
