Vegetable Sandwich
Eating healthy doesn't have to involve complex recipes, expensive ingredients, or hours of cooking; putting together this veggie sandwich is as easy as 1-2-3! With a burst of fresh tomato, crunchy cucumber, and creamy hummus, this simple but nutritious lunch covers multiple food groups, the perfect quick, satisfying meal with flavors straight from the garden!
Ingredients
- 2 slices whole-grain bread
- 2 slices tomato
- 1/2 small cucumber, sliced
- 1 tablespoon hummus
- 1 slice low-fat cheese
- Salt and pepper to taste
Instructions
- Place veggies on 1 bread slice. Cover with cheese.
- Spread hummus on other slice.
- Season to taste.
