This steak and potatoes recipe brings the essence of your favorite recipe, while adding a healthy alternative starch and leaner cut of beef.

Ingredients
- 2 large sweet potatoes
- 4 scallions
- 1/3 cup EVOO
- 1 teaspoon of dijon mustard
- 1 tablespoon of apple cider vinegar
- 1/2 tablespoon of balsamic vinegar
- 1/2 teaspoon honey
- 1/8 cup of chopped parsley
- 4 beef filets
- Steak Seasoning of your choice (optional)
- Salt & Pepper to taste
Directions
- Preheat the oven to 375 degrees F. Leave the sweet potato intact and bake until they can be just pierced with a fork – about 45 minutes. Cut into large chunks.
- While sweet potatoes are cooking, season your filet with salt, pepper, and desired steak seasoning. Let sit for 10-15 minutes at room temperature.
- Preheat a grill to high and cook the filet to your desired temperature. Let set and cool down before serving.
- Next, drizzle the potatoes and scallions with 1/3 cup olive oil. Grill the potatoes until just tender, about 5 minutes per side. Grill the scallions until softened and marked, about 1 minute per side. Remove from grill.
- In a large bowl, whisk the remaining 1/3 cup olive oil, mustard, vinegars, and honey; season with salt and pepper.
- Add the potatoes, scallions, and parsley and toss until the potatoes are well coated.
