Simple, Healthy Chicken Salad Ingredients
- 2 ½ lbs chicken breast
- 1 ¼ cup chicken broth
- 1 ¼ cup red grapes
- ½ cup plain nonfat Greek Yogurt
- ½ cup mayonnaise
- 1 Tbsp raw honey
- 1 ½ Tbsp Dijon mustard
- 2 Tbsp lemon juice
- ½ cup slivered almonds
- 2 Tbsp fresh chopped parsley
- Salt and pepper to taste
Directions
- Slow cook chicken breast and broth on high for 3-4 hours in a crockpot.
- Once chicken is cooked, shred and allow to cool.
- Slice grapes into quarters.
- Mix yogurt, mayonnaise, mustard, lemon juice, and honey until all ingredients are combined.
- Add almonds and grapes to cooled, shredded chicken.
- Pour your dressing mixture over chicken.
- Add parsley to salad.
- Mix well.
