Ingredients
For the Steak
- 2 lbs flank steak
- 2 Tbsp garlic minced
- 2 tsp ground coriander
- 2 Tbsp olive oil
- 1 Tbsp chili powder
- 1 Tbsp lime juice
- Salt and pepper to taste
For the Peppers and Onions
- 1 Tbsp olive oil
- 1 lime for garnish
- Cilantro optional
- 4 medium bell peppers any color
- 1 medium sweet onion
- Salt and pepper to taste
Instructions
1. Cut flank steak into strips against the grain of the meat and lightly season strips with salt and pepper.
2. Place steak strips in a large ziplock bag with 2 tbsp of olive oil, lime juice (1 lime), coriander, chili powder, and minced garlic. Allow to marinate for at least 15 minutes.
3. Cut peppers and onions into strips.
4. Add 1 tbsp of olive oil to a large hot skillet and saute onions and peppers down to desired wellness. Season with salt and pepper and some lime juice half way through.
5. Cook steak strips at medium high heat in a large skillet for 3-4 minutes each side bringing it to a medium heat.
6. Once steak is cooked, remove from the pan and allow to rest for approximately 5-10 minutes.
7. Divide the veggies and meat up evenly between 5 meal prep containers.
*Note: allow ingredients to cool to room temp before covering and storing in the refrigerator.
